However, my table has more columns, and I want to exclude columns 1 and 2 from being marked. How would I exclude only those two columns from being marked?

That’s very simple. Use the same code snippet from that answer, but make the following change:

var data =$.each(trs , function(index, tr){
    $.each($(tr).find("td"), function(index, td){ // Remove .not(":first")
      if (index < 2) return true; // Add this line
      cols[index] = cols[index] || [];
      cols[index].push($(td).text())
    })
});

This will skip over the first two columns.
