You need to pass the StepIconProps to your StepLabel. In your StepIconProps pass your desired icon/label in the icon key

import Button from "@material-ui/core/Button";
import Paper from "@material-ui/core/Paper";
import Step from "@material-ui/core/Step";
import StepContent from "@material-ui/core/StepContent";
import StepLabel from "@material-ui/core/StepLabel";
import Stepper from "@material-ui/core/Stepper";
import { makeStyles } from "@material-ui/core/styles";
import Typography from "@material-ui/core/Typography";
import React from "react";

const useStyles = makeStyles((theme) => ({

    width: "100%"
  },

    marginTop: theme.spacing(1),
    marginRight: theme.spacing(1)

    marginBottom: theme.spacing(2)

    padding: theme.spacing(3)
  }
